INGREDIENTS:
- 150g pasta (cooking time 10-12 minutes)
- 45 cl vegetable broth
- 4 white or brown mushrooms
- 1 onion
- 1 bunch baby spinach
- 150 g tofu rosso
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp oregano powder
- salt (optional)
METHOD:
- sauté the minced onion in a sauté frying pan.
- add the mushrooms and tofu.
- add the pasta and all the other ingredients in the frying pan.
- add the vegetable broth and cook for 10/12 minutes on medium heat.
- stir a few times during cooking.
- 1 minute before the end of the cooking time, add the baby spinach. Season to taste, and serve hot.
