Spelt Vegetarian Risotto with Romanesco Cauliflower

- 250 g small spelt
- 1 minced onion
- 200 g romanesco cauliflower
- 2 l vegetable broth
- 10 cl white wine
- 1 Tbsp olive oil
1/ Heat the wok at 2/3 of the maximum power of the stove and add the olive oil.
2/ Add the onions and sweat for 2 minutes.
3/ Add the spelt and cook until translucent, about 3 minutes, before adding the wine.
4/ Once the wine has evaporated, add a cup of broth and stir until all the liquid is absorbed.
5/ Repeat step 4 for 35 to 40 minutes.
6/ When fully cooked, grate the romanesco cauliflower like parmesan cheese and season.
7/ Serve with small piles of raw cauliflower.
Tip: you can cook the risotto ahead of time and warm it up with some broth
